Soya bean is a specie of legumes that is known for its versatility as a source of meal for man and even animals. It is fat free and a relatively cheap source of protein for animal feeds. It is also a source of oil, milk and cheese.
Wara (cheese) is a very healthy and tasty snack made from soya beans. The basic ingredients include soya bean seeds, lime juice or potash, seasoning, onions and pepper. To prepare this delicacy, soak the soya beans overnight and wash thoroughly. Grind to a paste and strain soybeans through a sieve. Boil on medium heat and stir frequently because it has a tendency to boil over. Reduce heat and add lime juice to separate the curds. When the milk starts to curdle, turn heat off, cover pot and set aside for an hour. Strain and squeeze out water from the cheese using the cheese cloth. Place in a sink or pot and .place a heavy object or a gallon of water on it for a while. Cut into desired sizes, season with some salt and pepper and fry in hot oil until golden brown and serve by the side of hot pepper sauce. Since wara has high protein content, it could be eaten in place of red meat.
Apart from wara, soya milk can be made from soya beans and is also an alternative from the usual milk consumed because of its added health benefits. Experts recommend it highly for young children.
